Deep red with ruby gleams, this is a wine that offers up its distinguished and powerful aromas progressively, in a harmony of black fruits and spices. The fresh, lively palate develops an elegant and complex structure with silky tannins melting into toasted notes, black cherry, black olive and cigar box in a finish that is a precursor of the great potential of this cuvée. Great with rib of beef, white meat dishes in sauce, duck breast, lamb and a variety of cheeses.
Terroir and Vinification
Ideally located in the middle of the Languedoc’s largest natural site, viticulture is practiced producing wines of high quality and reflecting the best that “Appellation La Clape” has to offer. In 2015, the appellation La Clape was accredited “Grand Cru” thus joining other prestigious, internationally renowned French appellations. The grapes for this wine come from vine planted on urgonian limestone, clay and stony soils. The blend is, for the most part, Syrah with Grenache Noir and Carignan, picked by hand and hand-sorted before and after de-stemming. Skin maturation lasts 15 days with manual cap punching and strict temperature control between 22° and 24°. The wine is then matured in cement vats for 12 months before bottling. Great with rib of beef, white meat dishes in sauce, duck breast, lamb and a variety of chesses.
